Pecorino/Chardonnay + Trebbiano/Manzoni Bianco/Verdicchio/Grenache Gris. The majority of the Concrete Bianco blend comes from De Fermo's 2.5 ha. of Pecorino (30 years average vine age) and 2.5 ha. of Chardonnay (the latter planted way back in 1926). In both cases, the fruit is harvested earlier than for De Fermo's single-variety bottlings of Pecorino and Chardonnay. The balance of the Concrtet blend is from an experimental half-hectare plot of mixed varieties. All are certified-biodynamic and harvested by hand. The bunches are partly destemmed and partly left in whole clusters, macerated for a few hours, pressed in an old-school vertical pressoir and then fermented with native yeasts and no temperature control in tank. The wine is aged in concrete tanks--hence the very literal name--for 6-7 months and bottled without fining or flitering or sulfur (used judiciously at racking only. Concrete is classified as a Vino Bianco, so the only geographical indicator on the bottle is "L.A." for the locale of Loreto Apruntino.
