Mezonte Raicilla Japo Mexcal

Master Mezcalero uses indigeneous agaves that mature over 12 to 25 years to produce this traditional hand made mezcal at his palenque near the sea in Jalisco. The Amarillo plants for this batch were cooked underground with local firewood, crushed by hand with wooden mallets, fermented in earthen volcanic rock vessels and distilled in hybrid Filipino direct fire stills. The aromas are very savory with notes of mesquite and dry rub spices, cured meat and roasted chiles. The palate by contrast is delicate and supple with vivid flavors of roasted squash, wet stones, apple butter and magnolia flowers.
