First, cider is made from the apples, which goes through an eleven month fermentation ‘sur lie’. It then goes through a double distillation, as required by AOC law, the brandy is then transferred into well-seasoned oak barrels and aged for 3 years.
Soft and sweet, maintaining great acidity, pronounced grip and notes of green apple and baking spice.
